INGREDIENTS 

  • 1/2 cup (or 8 tablespoons) coconut flour
  • 2 tablespoon confectioners swerve
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking powder
  • 3 large eggs, room temperature
  • 1/4 teaspoon vanilla extract

INSTRUCTIONS 

  1. To start, gather all of the ingredients in one place.
  2. Next, crack the eggs into a bowl. Then add all the dry ingredients into a separate large bowl, and mix. 
  3. Next, add the other wet ingredients into the bowl which contains the eggs and mix until well combined.
  4. Pour the wet ingredients into the dry ingredients then mix until well combined. This mixture should form a thick coconut flour pancake batter. 
  5. To make the pancakes, heat up a non stick skillet on medium heat. For each pancake, add 3 tablespoons of pancake batter, and cook for 1 minute on each side.
  6. Continue this process until all the pancakes are cooked, then serve these flapjacks warm with your favorite keto pancake toppings.
