This low carb fat bomb recipe is from Amanda at Keto Focus, and is a sweet cookie dough studded with deliciously creamy chocolate. 
Great as a snack or as a dessert, and ideal for anyone on a low carb diet. Enjoy 


  • 1 cup almond butter.
  • 1/3 cup confectioners swerve or lakanto.
  • 1 teaspoon vanilla extract.
  • 1/2 teaspoon kosher salt.
  • 1 cup almond flour.
  • 1/2 cup sugar free chocolate chips.


  1. Line a large baking sheet with parchment paper. Soften almond butter (1 cup) in the microwave at 50% power using 30-second intervals. Your almond butter should be runny, if it's dry, add a few teaspoons of coconut oil.
  2. Use an electric mixer to combine the almond butter, erythritol (1/3 cup), vanilla extract (1 teaspoon), salt (1/2 teaspoon), and almond flour (1 cup). Fold in the chocolate chips (1/2 cup). (If the almond butter is still warm, place your batter in the fridge for 15 minutes before folding in the chocolate chips to prevent melting).
  3. Use a cookie scoop or tablespoons to roll the dough into 28 bites. Place on prepared baking sheet and allow your fat bombs to chill in the fridge for 15 minutes before serving. Enjoy!.
